White Sonoran Wheat was brought to the desert Southwest in the 1600's by missionaries and grown to make into tortillas traditionally. Its current resurgence is due in part to the belief that it is lower in gluten and people who are sensitive tolerate it better than the newer varieties. It grows well in the desert because of its drought tolerance and does not need excessive nutrients.
