Saint Isiodore is a patron saint of farmers today but would not be canonized till 1608 so a Tudor farmer would not have heard of him. Saint Anthony/Antony would have been another possibility as he was patron saint of pig farmers.

One slight "error": The fields between the wooden beams in their Tudor house ARE filled with wattle and daub, BUT it would have one more ingredient AND it would be made differently:
1. you take a "stick" and then create a mixture of straw and clay/dung and wind that around the stick so it becomes THICK.
2. you take that thick stick and put it into one of the fields into grooves cut into opposing beams.
3. after that you have a "wavy" surface and this gets filled up by another layer of clay/dung/straw as a plaster.
The reason to add straw is to add tensile strength so you can make the wall THICK for insulation. If you would just use the method shown here the layer of clay/dung would be far too thick on either side OR you could only create a thin wall. The straw basically has the same function as the iron mesh in modern day concrete buildings. -

It's funny, because the others series (Green Valley, Victorian and Edwardian Farms) are all later in history but somehow the buildings and the house seemed less advanced. The main difference I see is in the tools.

The main role of the monasteries was for the religion to thoroughly exploit as many people as possible. A role shortly to be taken over by the monarchy.
