On Maui in Hawaii, we visit with Chef James Macdonald! First we travel Up Country Maui, to the O'O Organic Farm where James Macdonald grows all of his own Organic Produce for his two restaurants I'O and Pacific'O. James takes us on a tour of this lush and diverse organic farm and then prepares one of the world's freshest salads for us! Later that evening we met up with James again and dined at Restaurant I'O located on the shores of Lahaina in Maui! In this episode we also visit the Surfing Goat Dairy and meet owner Thomas Kafsack who gives us a tour of their Goat Cheese production operation. What a good job of explaining the philosophy behind the restaurants, and of the organic lifestyle. We stay each year next to 505 Front Street, but have never eaten at these restaurants because of price. I am going to try to save up my money to afford it (we'll leave the kids in the hotel room).
