Will and Ellie Studd visit Spring Brook Farm in Vermont to sample their delicious range of cheeses. This unique farm makes three kinds of cheese from a herd of Jersey Cows. The first, is a semi-hard washed rind cheese called Tarentaise, named after the French Valley which inspired it. The second, is a semi-soft washed rind cheese called Reading, named after the town in which it is made. The third, is semi-soft washed rind cheese called Ashbrook, which was inspired by French Morbier style cheese. In addition to cheese making the Farms For City Kids Foundation provides a stimulating outdoor classroom where urban youth explore new dimensions of learning as academics are integrated into everyday farm activities that practice and teach sustainability.
