Farms: Kingbird Farm Chicken Processing

In NYS, there is a regulatory exemption allowing farmers legally to market directly to customers any chickens, ducks or turkeys that they have killed on-farm, as long as they do not kill more than 1,000 chickens/ducks (or 250 turkeys) in a year. Mike and Karma Glos from Kingbird Farm demonstrate a low-cost but hygienic poultry processing set-up, and their efficient processing methods. For more information about meat processing regulations and marketing, read the Livestock Direct Marketing Guide (http://nebeginningfarmers.org/publications/livestock-direct-marketing-guide) produced by the Cornell Small Farms Program.
