I understand it was a quick video, but what about the part of removing 1/3 of the whey and using hot water to lower the acidity? i thought that was a key step to make gouda cheese...

I've just purchased my first goat gouda cheese, this from a family South of KC. First time to taste this gouda. What should I have found being the first time, taste & dryness? Wrap in clear celo type paper. Packaged just thirteen days ago. How firm should this be or is it like dried out some...thank you
