It gives culinary students the opportunity to work in the garden and see the food grow “from the ground up,” says Chef Mark Bergstrom, Program Director of Culinary and Pastry Arts at Virginia College in Greenville, SC. The food from the garden, which the students use to prepare recipes, is grown with all-natural fertilizer and without the use of pesticides. The advantages to this organic gardening approach can be seen, according to Chef Bergstrom, in the food’s color, texture, appearance, and taste. The garden provides a great opportunity to help students understand the importance of fresh, quality food. This farm-to-table approach to culinary education is important to the Greenville culinary school, offering a certificate in Culinary Arts or Pastry Arts, which can be completed in 36 weeks.
