San Pellegrino is amazing and this video is awesome. My fiancee and I are working towards something like this in the Black Hills of South Dakota. We are looking at Bison and Chicken for now.

Major round of applause to the militant meat eaters slamming people expressing THEIR VIEW that it is sad that animals are killed for food. I saw no comments that shamed or put down people who eat meat, but people some people obviously felt threatened:) If something makes someone sad, nothing you do or say can change their opinion. Seriously, I didn't expect to find children in Tastemade's comments.

I had the invaluable privilege of working for Melissa and Price for 10 years at Primo, and as intense and inspirational as this video is; it does not do either of them justice. Primo represents a dedication that is far too lacking in almost any vocation today - it is not just a tribute to heritage, but a dedication to the future. It is a manifestation of values and ethics that few commercial enterprises aspire to, let alone achieve. The passion and motivation that are evident in the words that you hear are not merely cinematographic license and crafty editing - that catch in her voice, his statement of care - are truly the foundation of the dishes that flow from this kitchen to the dining room. If you hope to believe that "we are what we eat, " - or if you need to learn to believe that - this is the proof. This isn't just about dinner, this is about our environment, our children, our economy, our community, and our world. In this progression of effort, someone is sinking a trowel into the earth, every day, and removing a pebble the size of a marble, and putting it in a specific place where it will be beneficial - and that is why your turnip is perfect. Someone is shoveling bedding from a chicken coop, cutting greens at 4 AM before a party, or 10 PM before a frost, or throwing logs in the oven or cleaning a 10 gallon stock pot at 2 in the morning, or spending 2 hours wiping spots off of wine glasses. It's also about donating to the homeless, and hiring teenagers, and cooking holiday dinners for families who might never otherwise taste the love that lies behind each recipe that flows from this kitchen.
