Vivian, a U.S. military veteran and Joann Smotherman own and operate Eden’s Cove Farm in Cedar Creek, Texas. Through hard work, determination and support from USDA’s new and beginning farmer and rancher programs, the Smothermans raise, process and direct-market a wide variety of artisan pork products to buyers in and around Austin and San Antonio. The pork is derived from their pasture raised, Large Black Hogs–a heritage hog breed. USDA programs have provided the Smoethermans with the capital required to purchase much-needed farm and commercial kitchen equipment.
