I am not so sure about serving the peacock pie with the skin and feathers...what about the mites on them?

the fires in the kitchens would not have been allowed to go out. The coals would have been banked and thus kept going so the cooks didn't have to waste time rebuilding them. The spitted meats would have been "done" at dinner time. The "spit boys" would have been feeding the fires from very very early in the morning.

I have a recipe book from the 1970s called Seven Centuries of English Cooking, it's an enlightening read. One of the finest recipes is for Honey and Saffron Quiche, served at the Tudor court of Henry the VIII it is truly delicious!

This is such a fantastic series. Thank you so much for uploading it. I am in awe of what our ancestors truly went through just to survive; and am reminded of just how easy we have it today; it's quite humbling.

This is a Christmas feast, but is it being held at Christmas? Because the countryside looks pretty lush for late December if it is.

I visited Coldwitz DE in 2013 which was a "Gaming,hunting" castle. I purchased a copy of their recipes from the 1500-1850's. I've only ever tried a few sweets recipes with modern supplies . The taste was a bit peculiar but not out of the realm of reason.
