i hope you have tried our version of this (Philippines) There are parts of the country that they even parade hundreds of roast pigs before a feast btw, no thermometer, just hours and hours of indirect heat. We use bamboo tree as a skewer being manually turned by 1 person sometimes 2. We call it "lechon" you probably heard of it already. Great channel, thank you for sharing your videos
